Popeye

As background, I grew up eating spinach in the cooked form (fill a container with raw spinach and some water and stick it in the microwave for a few minutes). Once cooked, you douse it in lemon juice. In my opinion, it's quite good. So that's how I cooked some left over spinach for dinner that needed to be eaten up. When Melanie sat down to eat, she looked at the spinach and said "What the heck is that?" "Spinach", I told her. She was not thrilled. However, we have kept the rule from both of our parents which states, you must try everything at least once. Melanie reluctantly took a small amount of spinach and set it on her plate. I showed her how you take a bottle of lemon juice and pour some over the spinach. She followed suite and eventually pulled a small forkful up to her mouth. She eyed it with apparent disgust. She opened her mouth, and took a bite. Her first reaction was most definitely camera worthy. I regret not having the camera with me. She found it utterly disgusting. It was by far the funniest face I've seen her make in a long time. She looked like she was going to hurl. I couldn't help but laugh at her, continuing to eat my own spinach. "Now you know how I like my spinach", I explained to her. "That's fine, but I'm never going to make it for you", she replied. Oh well, I can always make it myself. :)

Becuase it turned out amazing!!!

       So I've been a victim of a Dinner Rut (can't think of anything to make and nothing sounds good.. grilled chicken and ... salad sounds dinner ish to me!) for the past week ish.. So I decided to surprise my wonderful husband who never complained about my terrible dinner ideas (or lack thereof...) by making Cafe Rio's sweet pork burritos. And I have to say it was the easiest dinner I've made in a long time and it turned out amazing! All I did was take a pork roast (or any pork/chicken you have on hand) throw it in the slow cooker with 2 cups homemade salsa (I used the salsa that my wonderful sister Whitney canned) 1 1/2 c brown sugar and let it cook all day. when I got home from work I just broke up the meat into little pieces (and since it was so tender all I did was take a spoon and pull it apart). Let it cook a little longer while I cut up some lettuce, tomatoes, limes, grated cheese, pulled out sour cream, and set the table. Matt fried the tortillas for us and melted the cheese on top. It really was so good and so freaking easy!! And cleaning up was even easier because I'd used a slow cooker liner for the meat so all I did was put everything in containers, throw away the liner and wash our plates, cups and silverware! Seriously doesn't get any better then that!!

Life

Hey everyone!

       Life is still just going like normal for us! Matt is always busy with work and school. He just started a new project for the Space Center. He's going to be making the Panels of the new Galileo. I'm excited to see them when they are done! He does amazing work on them! Other than that there's really nothing new for him.

       I have this week off at school so I'm going to be working on some things around the house that I really want done. Like staining our furniture, touch up painting, finishing the drawers/doors in the hallway and finishing up all the Christmas presents for the Long side of the family. And of course, homework in between all that. I'm actually glad that I don't have class this week so that I can get ahead on my homework and get all the little things done around the house. :)
Oh! Question for everyone...I'm running out of ideas for dinners this week, currently all I can think to make I've made in the last two weeks or else it just doesn't sound good... I'm thinking about doing Haystacks for one of the nights but I'm not really sure of what else to do. Any ideas?
